Sandah Guri (traditionally spelled Xandah Guri) is a highly revered, artisanal Assamese flour made through a meticulous, time-honoured process of soaking, parboiling, dry-roasting, and pounding indigenous rice varieties—most notably Bora Saul (sticky rice). Visually, this flour features a warm, rustic cream-to-golden tan colour with a distinctive, slightly granular, and sandy texture from which it derives its name. It carries an intensely nostalgic, deeply comforting, and smoky toasted fragrance, accompanied by a rich, multi-layered savoury flavour profile with prominent nutty undertones.
Nutritionally, Sandah Guri is celebrated as a comforting, highly bioavailable source of instant clean energy and dietary fibre. Because the rice kernels undergo a thorough roasting in heavy iron pans before milling, the starches are completely pre-gelatinized, rendering the flour exceptionally gentle on the stomach and effortlessly easy to digest.
