Description :

The Ancient Powerhouse: Kodo Millet – Your Organic Gateway to Sustainable Wellness.
Kodo millet (Paspalum scrobiculatum) is a resilient, ancient grain that has been a staple of traditional Indian diets for thousands of years. Often referred to as the nutritious grain, it was historically cherished by farmers for its ability to thrive in harsh, dry conditions where other crops would fail. Today, it is gaining global recognition as a sustainable superfood, celebrated not only for its low environmental footprint but also for its exceptional nutritional density and versatility in the kitchen.
Unrivalled Nutritional Benefits
What sets Kodo millet apart from common cereals like rice and wheat is its high concentration of dietary fibre and antioxidants. It is naturally gluten-free and possesses a remarkably low glycaemic index, which helps in maintaining steady energy levels and supporting metabolic health. Beyond its fibre content, Kodo is a rich source of essential minerals like iron, calcium, and magnesium, as well as polyphenols that offer potent antioxidant properties. This makes it an ideal choice for health-conscious consumers looking to improve digestion and overall vitality.
Culinary Versatility for Modern Kitchens
In terms of flavour and texture, Kodo millet is mild, earthy, and slightly nutty, allowing it to blend seamlessly into a variety of cuisines. When cooked, the grains remain distinct and fluffy, making it a perfect one-to-one substitute for white rice in dishes like khichdi, pulav, and biryani. It can also be ground into a fine flour for nutrient-dense rotis, dosas, and even contemporary baked goods. Because it absorbs flavours beautifully, it serves as an excellent base for both savoury meals and sweet porridges, offering a wholesome upgrade to everyday cooking.
Sustainable Sourcing and Empowering Farmers
We are committed to ethical, organic sourcing that prioritizes the health of the planet and the prosperity of small-scale farmers. By choosing our Kodo millet, you are supporting traditional agricultural communities that utilize chemical-free, regenerative practices to preserve soil vitality. These low-scale farmers rely on drought-resistant ancient grains to maintain their livelihoods in unpredictable climates. Why Choose Kodo Millet?
Kodo millet is a nutritional powerhouse that offers a smarter, gluten-free alternative to polished rice. Packed with high dietary fibre and essential minerals like iron and calcium, it supports healthy digestion and long-lasting energy. Its low glycaemic index makes it ideal for managing blood sugar levels, while its rich antioxidant content helps combat oxidative stress. By choosing Kodo millet, you are opting for a sustainable, drought-resilient superfood that nourishes your body while being kind to the planet.
Savour the legacy of a time-honoured supergrain that heals the earth and fuels your vitality—every bowl champions a future of organic wellness, ecological harmony, and the empowerment of our local farming communities.

Method Of Cooking :

Rinsing & Cleaning: Thoroughly wash 1 cup of Kodo millet in cold running water 2–3 times to remove any surface starch or natural impurities.
Essential Soaking: Soak the rinsed millet in 2 to 2.5 cups of water for 4–6 hours. Soaking is crucial as it neutralizes phytic acid, making the nutrients easier for the body to absorb.
Stovetop Absorption Method:
- Place the soaked millet and its soaking water into a heavy-bottomed pot.
- Bring to a gentle boil, then reduce the heat to the lowest setting and cover with a tight lid.
- Simmer for 10–12 minutes until all the liquid is absorbed.
Resting Period: Once cooked, turn off the heat and let the pot sit covered for 5–10 minutes. This allows the steam to finish the cooking process, ensuring the grains are fluffy and distinct.
Pressure Cooker Instructions: Use a 1:2 ratio (1 cup millet to 2 cups water). Cook for 2 whistles on medium heat and allow the pressure to release naturally.
Fluffing Technique: Use a fork to gently fluff the grains. Avoid using a spoon while hot to prevent the grains from breaking or becoming mushy.
Texture Customization: For a firm, rice-like texture (Pulao/Biryani), use a 1:2 ratio. For a softer, creamy consistency (Porridge/Khichdi), increase the water ratio to 1:3 or 1:4.
Flavour Tip: Add a pinch of sea salt or a teaspoon of cold-pressed oil to the water before boiling to enhance the natural earthy flavour and keep the grains non-sticky.

Moisture Content :

Maintained below 10-12% to ensure grain stability and prevent fungal growth.
