Oyster mushrooms are widely cultivated fungi with a distinctive fan or oyster shape, found in shades of white, gray, or brown. They have a firm, white flesh, a mild and slightly nutty or seafood-like flavour, and a bittersweet aroma. They grow in clusters on wood and are recognizable by their white, wavy gills that run down the stem, a feature known as being decurrent.
