Dry oyster mushrooms are dehydrated oyster mushrooms, which are light beige to grey and brittle when dry. They have a concentrated umami flavour that intensifies upon drying and a mild, sweet taste. Before use, they are rehydrated by soaking in warm water and become a versatile ingredient for soups, stir-fries, sauces, and stews, adding a tender, meaty texture and earthy notes.
